西餐(序号续主食小吃)
Western Cuisine
西餐大致可分为法式、英式、意式、俄式、美式,地中海等多种不同风格的菜肴。正式的全套西餐上菜顺序是:开胃菜,紧跟其后的是汤,之后是副菜,。接着就是主菜,和主菜搭配的是配菜,它在风格和营养上与主菜协调一致。最后是甜品,包括布丁、蛋糕、冰淇淋、奶酪、水果等。
Western cuisine is an umbrella name, under which a large number of cuisines can be further classified. For instance, French, British, Italian, Russian, American, Mediterranean cuisines are common and popular, each of which has unique characteristics. A formal Western-style full meal service consists of multiple courses, which are presented in a particular order. Specifically, the first course is the appetizer; then soup, and then the main course are served. There may also be side disheds which are in harmony with the main course in terms of genre and nutrition. The last course is dessert which may include pudding, cake, ice-cream, cheese, or fruit.
一、 开胃菜(头盘及沙拉类 )Appetizers & Salads
正式西餐中的第一道菜是开胃菜,也称为头盘。可以分为热头盘或冷头盘,或是饮品头盘。
In a Western-style formal meal, the very first course served is the appetizer, which may also be called the starter. Generally, appetizers can be classified as hot or cold, solid or liquid appetizers, and the like.

二、汤类 Soups
与中餐不同,西餐中的第二道菜是汤。跟开胃菜相似,汤的种类也十分繁多。有热汤和冷汤之分,还有清汤和浓汤之分。另外,通过品尝汤的味道又可以将汤分为甜汤或是咸汤。
Different from a Chinese meal, the second course in a Western meal sometimes is soup. Similar to appetizers, various soups can be further classified into many kinds, such as hot or cold and clear or thick soups. In addition, sweet or savory soups can be grouped by taste.

三、副菜 Entrées
副菜,也就是英语中的“Entrée”一词来源于法语,其本意是开端或入口。从传统意义上讲,副菜是西餐中的第三道菜,在主菜之前供应。因此,副菜的主要任务是为主菜做准备。由于鱼、海鲜类菜肴比较容易消化,所以它们常常在西餐中扮演副菜的角色。
“Entrée” is from French, literally meaning entry or entrance . Traditionally, the entrée is served as the third course, preceding the main course, in a Western meal. Therefore, the primary responsibility
of the entrée is to set the stage for the main course. Considering that they are relatively easier to digest, entrées usually consist of dishes made of fish or other seafood.
 
四、主菜 Main Courses
紧随副菜之后的是主菜,是西餐中最主要的一道菜。主菜通常都是一些肉类的菜肴,尤其是牛肉和牛排。其他常用的肉类品种包括羊肉、禽类、猪肉和贝壳类。作为一餐中最重要也是最有影响力的一道菜,主菜代表着整个餐宴的风格和特色。因此,在一些特殊场合,比如传统节日,人们常常会根据传统习俗制作一些特定的主菜。拿感恩节来说。在北美,感恩节是一个重要的节日,通常也是一个家人、友人聚会,表达感激之情的好时机。传统感恩节大餐的的特色主菜是火鸡。
Following the entrée is the main course, which is the primary dish in a Western meal. The main course is often referred to as the meat course, as meat is its major ingredient, particularly veal and steak. Other possible meats include poultry, pork and shellfish. As the primary course of a meal, it typifies the style of the meal. Therefore,under certain circumstances such as festivals, particular main courses are often prepared to match the traditional custom. Take Thanksgiving as an example. As one of the most important festivals in North America, Thanksgiving is also a great opportunity for families and friends to dine together and express their appreciation. Traditionally, turkey is the most common main course for a Thanksgiving dinner.

五、配菜 Side Dishes
在西餐中,配菜可以和主菜一同包含在套餐中,而有的配菜则被单独列在了单点菜牌(A La Cart)一栏中。尽管配菜的种类繁多,就餐者的喜好各异,但选择配菜的一个重要基本原则就是要使其在风格上和主菜一致,营养上和主菜协调。由于大多数主菜都是肉类菜肴,因此蔬菜类菜肴常被认为是特色配菜。作为配菜的沙拉通常是装在小碗里或是特制的配菜盘子里。除了蔬菜之外,淀粉类的配菜也很常见,比如小面包,蒜香面包、野生糙米、通心粉、意大利面、土豆泥、烤土豆还有土豆沙拉等等。凉拌卷心菜、焗豆、汤类、薯条也都是很受欢迎的配菜。
In a Western meal, it is possible that side dish and main course are considered a combination. Side dishes are listed under the a La Cart column. In spite of the large varieties of side dishes and diners’ preferences, the principle of choosing side dishes is to maintain harmony with the main course in terms of genre and nutrition.
Given that main courses are primarily meat dishes, typically vegetables are the side dishes. Most of the time, when vegetables serve as side dishes, they are served in the form of salads. A side salad is usually served in a small bowl or special salad plate. In addition to vegetables, starch side dishes are also very popular. Common sides include dinner rolls, garlic bread, wild brown rice, macaroni, spaghetti, mashed potatoes, baked potatoes, as well as potato salad. Coleslaw, corn, baked beans, soups, and French fries are also pleasing choices.

六、甜点 Desserts
西餐中, 甜点通常放在主菜之后享用。英语中的“甜点”(Dessert)一词来源于法语,古法语将其拼写为“Desservir”。本意是“提供”、“清理餐桌”。很明显,甜点通常是宴席里最后一个登场的。广义上的甜点泛指在主菜之后提供的所有食物,比如饼干、糕点、糖果、布丁、蛋糕、冰淇淋、水果、酸奶等等。
After the main course comes the dessert. The word "dessert" originates from the French language, which in old French is spelled "desservir". Literally, "dessert" means "to serve" and "to clear the table", both of which vividly demonstrate that dessert is offered at the end of a meal. Generally, dessert refers to the sweet or sugar-contained food served after the main course, such as cookies, pastries, candies, pudding, cakes, ice cream, fruit, yogurt, etc.
